Really enjoyed making this dish. Tofu is so versatile and can be used in so many types of dishes. Of course this version is vegan or for fasting so does not contain any butter (Kibe).

We start the video of this dish we pre fried tofu.
So what we are going to need is as follows.
400 grms fried cubed tofu
2 med onions finely chopped
1/2 teaspoon of chopped garlic
1/2 teaspoon mekalesha
1/4 cup olive oil
Salt to taste
3 teaspoons berbere
As with all wot dishes we will start buy adding the onions to a dry pan.
Let us cook these for about 5 mins with a lid on.
Now it is time to add the olive oil, stir well add the lid and cook for 4 mins.
Add the garlic and the berbere and stir well.
Berbere needs to cook otherwise it will have a powder taste.
Stir well, keep and eye on it and cook for 5 mins with the lid on.
Add a touch of cold water 1/8 of a cup at this stage.
We need the water to reduce, this will take 4 or 5 mins, then repeat by adding the rest of the cold water.
Lower the heat, cover and cook for 5 mins.
Add the salt, mekalesha and the fried tofu, stir and cook for a few mins to get all the wot sauce into the tofu bits.
