1 ½ lbs sorghum powder
5 cups water
In a mixing bowl add flour and water. Mix well.
Add yeast mixing well.
Leave to stand until mixture rises.
Preheat a pancake pan.
With ¾ cup of mixture slowly pour into pan, staring at the edges circling round until it reaches the centre.
Leave for 4 minutes.
Once ready the injeras will rise from the pan.
Remove and cool on a clean cloth.
Repeat with remaining mixture.
Store in a cool place.
