1 ½ lbs tef flour
5 cups water
1½ pkts yeast
Clean the tef flour removing all foreign materials.
Grind to a fine powder.
In a mixing bowl add powder slowly adding a little water to form dough.
Dissolve yeast in warm water and add to the dough.
Cover the dough and leave for 3 days.
The water would have risen to the top of the dough, discard the water.
In a pan boil 2 cups water.
Add a cup of dough mixture to boiling water, stirring constantly until mixture thickens.
Allow to cool and pour back into the mixture add more water and leave to rise.
Preheat a pancake pan.
With ¾ cup of mixture slowly pour into pan, staring at the edges circling round until it reaches the centre.
Leave for 4 minutes.
Once ready the injera will rise from the pan.
Remove and cool on a clean cloth.
Repeat with remaining mixture.
Store in a cool place
