Kikel or Kikil is normally a meat stew using the stock of the meat and bones. This version does not use as it is a Vegan or fasting dish. You can use any mix of vegetables you like, we have used, onions, garlic, ginger, carrots, potato, celery, broccoli, spinach and white cabbage. We have added to this salt, pepper, turmeric and long green fresh chilli.
Start by adding a little oil to a large pan and fry your onions, garlic, ginger, salt, pepper and turmeric for about 4 mins.
Then add your hardest or longest to cook vegetables, in our case that is the potatoes, carrots and celery. Cook for about 3 mins stirring often.
Now add the vegetables you have in order of cooking time and again cook for 3 mins on a high heat.
At this point we will add water (you could if you like use a stock or stock cube).
Add plenty of water as Kikel is generally a water based dish.
We have also added a couple of long green (mild) chilli. Cook for about 10 mins or until your hardest vegetable is done.

7 Potatoes – peeled and cut into chunks
5 Carrots – peeled and cut
Good handful of Green beans – cut in half
3 Onion – chopped
Garlic minced – 3 cloves
Ginger, peeled & minced – 1 Tablespoon
Chili pepper, minced – 2-3
Niter kibbeh – 3 tablespoons
salt and pepper to taste
