Ethiopian Bean Salad

We really love this salad and it is eaten often in our house.

It is fast and really tasty. So simple just combine it all in a mixing bowl. If you are using canned or tinned beans (which by the way are super and fast) make sure you wash them well in cold water. Now when it comes to the bean selection the choice is huge, red kidney, chickpeas, pinto, white beans the list goes on and on, so mix and blend how you wish. We like to add chopped tomatoes, cucumber, grated carrot, onion, garlic, fresh green chilli, lemon juice and olive oil. Go ahead and add other vegetables as you wish, salt and black pepper finish this easy salad.
