Note – Gomen, for the recipes below we will be using Collard Greens.
This recipes can be made with light leaves such as Spinach up to the various grades of harder green leaves.
2 lb collard greens, washed & coarsely chopped
2 red onion, diced
4 cloves garlic chopped
4 chopped green chilli
Boil your collards for 5 minutes until they’ve softened.
While still cooking add a tablespoon of Niter Kibbeh (Nit’ir Qibe) butter.
Saute your red onion in the butter, about 5 minutes, stirring often to make sure they don’t brown. Drain your collards, and then add them along with the garlic and peppers to the red onion. Lower the heat and cook it down until the collards have really wilted, stirring frequently.
