Injera made from rice – Yeruz

1½ lbs rice flour
1 pkt yeast
5 cups water


In a mixing bowl add flour and water. Mixing well
Add yeast and mix well.
Allow to rise.
Preheat a pancake pan.
With ¾ cup of mixture slowly pour into pan, staring at the edges circling round until it reaches the centre.
Leave for 4 minutes.
Once ready the injeras will rise from the pan.
Remove and cool on a clean cloth.
Repeat with remaining mixture.
Store in a cool place
